- Go down to your favorite butcher and pick up a tasty butterflied leg of lamb.
- Put some Wyld Smoke Dusty's Blend into a shaker, apply to both sides of the leg with a good dusting
- Get it on the smoker at 220f with some mesquite. This one's been cooked to medium at internal temp of 160f and took 2.5 hours
- Rest for 20 mins and slice. Sprinkle with Coriander leaves and squeeze of lemon.
- Serve with some awesome slaw, or try the salad in the pics which was rocket, Apple and shredded raw cauliflower with a simple vinaigrette
